If you have ever been to Dishoom, this book will show you not only where their great recipes come from, but also their inspiration for their designs and why they seem to have pictures of bodybuilders everywhere! The right combination of saltiness and meatiness from the bacon and the sweetness of the naan were offset by the tanginess of tomato-chilli jam and refreshed by the coriander. It was tasty, but takes a long time, perhaps make the sub recipe one day and finish the rest the next day. A gorgeous book that delves into the history and flavours of Mumbai's Irani cafes, so evocative that I can smell the Keema Pau even before I’ve started cooking.
