Before anyone freaks out--the oil on the recipe is 1/2 C--but you have 1/4 C leftover, so I only calculated 1/4 cup into the recipe.

Out of the package you get four enchiladas. 10 Comments / Corn tortillas don’t get nearly as gooey after being soaked and then cooked; the downside is that they’re more likely to crack while you’re filling/rolling them.

I wouldn’t say no to these. Please reply to my email. At home I make enchiladas both with flour and corn tortillas, although my family seems to prefer the texture of enchiladas with flour tortillas. Top second layer with strips of tortillas, remainder of sauce and remainder of cheese.

These taste fresh and are really good out of the toaster oven.
